The fast for Easter starts in a few days and this giouvetsi with whole mushrooms is one of the dishes that can be made very easily throughout the fast.

Giouvetsi with Mushrooms
Divine, vegan giouvetsi with whole mushrooms that you will love to eat.
Ingredients
- 500 gr. mushrooms
- 1 tbsp olive oil
- 1 onion
- 1/4 tsp cinnamon
- salt and black pepper
- 1 tbsp tomato paste
- 3/4 cup water
- 1/4 cup red wine
- 1 cup tomato sauce
- 3 cup water
- 1/2 cup orzo
Instructions
- We start by pouring olive oil into a deep pan or shallow pot.
- Saute the onion together with the cinnamon, salt and black pepper.
- Add the tomato paste.
- After 3-4 minutes pour the wine. Leave for 3-4 minutes and add 3/4 fl. water and tomato sauce. As soon as they boil, add the mushrooms.
- Lower the temperature and cover. Leave for 10 minutes.
- Preheat the oven to 180 C.
- Uncover and pour in the rest of the water and the orzo.
- Mix for 1-2 minutes and transfer to a baking tray. Bake in the oven for 20-25 minutes. If necessary, add a little more hot water.
- Serve with plant based yellow cheese or plant based feta.
