Tips and Substitutions

You can use dried plums instead of dates in your recipe. You can put half dates and half raisins like I do sometimes when I don't have many dates.

If you don't like the combination of chocolate and salt, you can not put any salt in your recipe.

The bigger your pan, the thinner your fudge will be. The smaller it is, the thicker it will be.

Fudge with Salted Caramel

It's chewy, it's healthy, it's delicious.

Ingredients

  • 250 gr. dates
  • 300 gr. sugar free chocolate
  • 140 gr peanut butter
  • 1/2 tsp salt

Instructions 

  • Start by soaking the dates in warm water for 30 minutes. Drain them and throw them in the blender. Beat them until you get a date paste.
  • It's okay to have a few little bits and pieces. Add the peanut butter and beat again until the ingredients are smooth.
  • Empty into a bowl.
  • Melt the chocolate. How do you do that? Put some water in a saucepan. As soon as it boils, place a bowl on top with the chocolate cut into pieces. That way it will melt even faster.
  • Stir until your couverture is melted. Remove from the eye and pour the chocolate into the bowl with the date paste.
  • Stir it up. Add the salt and mix. Transfer to a tray and refrigerate for 2-3 hours.
  • Then remove from the fridge and cut into pieces. To me it's even more perfect than frozen.
