Baked Potato Croquettes

These potato croquettes are super healthy.

Ingredients

  • 380 gr. potatoes
  • 1 tbsp flour
  • 1/2 tsp salt
  • 1 tsp garlic
  • 1 tbsp olive oil

for the breading

  • 120 ml milk of your choice
  • 60 gr. flour (or oat flour)
  • 50 gr. breadcrumbs with salt

Instructions 

  • Start by boiling the potatoes cut into bite-sized pieces so that they boil faster. Drain them and throw them back into the pot.
  • Mash the potatoes with a fork. Mix with the flour, garlic powder, salt and olive oil.
  • Put the mixture in the fridge for 30 minutes.
  • Form 15 croquettes.
  • Put the flour in a bowl, the milk in a second and the breadcrumbs in a third.
  • Dip each croquette first in the flour, then in the milk and finally in the breadcrumbs. Drizzle with olive oil.
  • Bake in a preheated oven at 180 C for 20 minutes. Halfway through the time, turn your croquettes.
