Ingredients

  • 400 gr. chickpeas
  • 1 onion
  • 1 potato
  • 1 carrot
  • 4-5 garlic cloves
  • 1 cup wild rice
  • 8 cup vegetable stock
  • 2 tbsp shredded mozzarella
  • 1 tsp paprika
  • 1 tsp thyme
  • salt and black pepper
  • a pinch of turmeric
  • 1/4 cup tahini
  • 1/2 lemon (if you want)

Instructions 

  • We start by heating some vegetable broth in a pot. Add the onion, potato and carrot and cook for 5 minutes.
  • Add paprika, garlic, salt, pepper, thyme. Cook for another 8 minutes.
  • Pour in the rice, chickpeas and vegetable stock.
  • As soon as it boils, reduce the temperature to medium.
  • Cook for about 30 minutes, until the rice is cooked.
  • Add the tahini and mix.
  • If you want, pour some lemon on top and serve.
