It is one of those soups that when you eat them you feel like you are doing something very good for your body. And this is also the truth. Divine creamy soup with wild rice and vegetables that you will love.
Velvety soups are good, but soups that have many textures and you can feel the vegetables you are eating are something else for me. Specifically, this soup contains potato, onion, carrot, garlic, chickpeas and wild rice. It therefore has everything and is also very tasty and filling.
Tips and Substitutions
If you want, you can replace the potato with sweet potato.
Add other vegetables if you want to your soup.

Creamy Soup with Wild Rice
Ingredients
- 400 gr. chickpeas
- 1 onion
- 1 potato
- 1 carrot
- 4-5 garlic cloves
- 1 cup wild rice
- 8 cup vegetable stock
- 2 tbsp shredded mozzarella
- 1 tsp paprika
- 1 tsp thyme
- salt and black pepper
- a pinch of turmeric
- 1/4 cup tahini
- 1/2 lemon (if you want)
Instructions
- We start by heating some vegetable broth in a pot. Add the onion, potato and carrot and cook for 5 minutes.
- Add paprika, garlic, salt, pepper, thyme. Cook for another 8 minutes.
- Pour in the rice, chickpeas and vegetable stock.
- As soon as it boils, reduce the temperature to medium.
- Cook for about 30 minutes, until the rice is cooked.
- Add the tahini and mix.
- If you want, pour some lemon on top and serve.
