If you make them without the sauce then they are perfect for sandwiches. Otherwise, if you make them with the sauce, you can enjoy them with whatever side dish you want or simply with warm, toasted bread.
INGREDIENTS AND REPLACEMENTS
LENTILS: For greater convenience, you can use ready-made boiled lentils available on the market. Otherwise you should boil your lentils as you normally do in salted water for 30-40 minutes.
BREADCRUMBS: Instead of breadcrumbs you can use oat flour.
SHREDDED CHEESE: In my recipe I use grated mozzarella. If you are vegan you can use nutritional yeast or vegetable cheese of your choice.
OLIVE OIL: Olive oil is a necessary ingredient and it is good not to skip it.

4-Ingredient Lentil Meatballs
Ingredients
- 300 gr. cooked lentils
- 2 tbsp breadcrumbs
- 2 tbsp shredded cheese of your choice
- 3 tbsp olive oil
- salt and black pepper
for the tomato sauce:
- 300 gr. tomatoes
- 1 onion
- 2 garlic cloves
- 1 carrot
- olive oil
Instructions
- Start by putting your boiled lentils, breadcrumbs, grated cheese, olive oil, salt and pepper in a bowl or in a bowl.
- Beat well. Form your meatballs. Bake in a preheated oven at 180C for 30 minutes.
- In the meantime, if you want, make your sauce. Pour the olive oil into a non-stick pan. Once heated, add the onion, garlic and carrot. Saute for 4-5 minutes and add the tomato. Add salt and pepper and mix well. Add some water and cook for 20 minutes at medium temperature.
- Allow your sauce to cool for a while before blitzing it in a food processor to make it more saucey.
- Pour the sauce on your meatballs, mix and put back in the oven for 3-4 minutes. Take it out, sprinkle grated cheese on top if you want and enjoy your meatballs with whatever side dish you want or just with some bread.
