Another recipe that doesn't take more than 15 minutes to prepare is the one that has become a trend on tiktok. Eggs cooked on feta cheese, placed on a tortilla with whatever else anyone wants.
I made a slightly different version, of course keeping the eggs and the feta cheese. What exactly did I do? Instead of tortillas I used wholemeal souvlaki pita and added tomato slices and spinach leaves to give my meal a nutrient boost and turn it into a lunch.
The ingredients you will need to try the tiktok trend that excites everyone are: eggs (I have brought many from the village), feta cheese, pie for souvlaki, tomato, baby spinach or arugula. If you want you can add some ketchup on top.
Tips
This way you can make "fried" eggs with minimal olive oil. All you need is a pan or a pot with a non-stick lid. Thus, by "covering" your egg, it is cooked without having to swim in oil. You leave it for a few minutes (you can check now and then).

Ingredients
- 2 eggs
- feta cheese
- 2 pites for souvlaki
- 1 tomato
- 1 cup baby spinach or arugula
- salt and black pepper
- a little kethcup (if you want)
Instructions
- Start by heating some olive oil in a non-stick pan.
- Create a circle with the grated cheese. Wait 1 minute and break an egg inside the circle. Cover the pan with a lid and leave it until your egg is cooked. You can check every now and then and take it out when you see that it is as honeyed as you want it.
- In the meantime, heat the pie for souvlaki in the toaster.
- Put some tomato slices and some baby spinach on top of the pie.
- Put the egg on top with the feta cheese and some ketchup (if you want) and enjoy your perfect "egg souvlaki".
