A great summer salad that has it all...zucchini, peas, orzo and feta cheese!

The ingredients you will need to prepare it are very simple and super summery. And if you are vegan, you can simply replace the feta with vegan feta.

The basic ingredients you will need are orzo, peas, zucchini and feta cheese. As for the dressing, it's very simple. To prepare it you will need lemon juice and zest, olive oil, salt, pepper and thyme.

Ingredients

  • 250 gr. orzo
  • 1 zucchini 
  • 1 onion 
  • 1/2 cup peas 
  • 2 garlic cloves 
  • 1/4 cup feta cheese 

for the dressing

  • 1 tbsp lemon zest 
  • 1/2 lemon 
  • 1 tbsp olive oil 
  • 1/2 tsp salt 
  • 1/2 tsp pepper 
  • 1 tbsp thyme 

Instructions 

  • Preheat the oven to 180 C. 
  • Lightly oil the zucchini and onions. Add salt and pepper. Put the garlic in the pan. Bake for 25-30 minutes. Halfway through the time, stir. 
  • Boil the orzo according to the instructions on the package in salted water. Boil the peas together with the orzo. We drain. 
  • Put the orzo, peas, onion and zucchini in a bowl. 
  • Pour all the ingredients for the dressing into a jar. Close the jar and beat well. Pour over the salad and mix gently. 
  • Add the feta and mix again. We serve.
