This summer everyone is talking about Barbie and her movie. Everything is released in shades of pink and I personally like it a lot. Pink is one of my favorite colors and this very cool Barbie pasta has also become my favorite summer food.

One of the reasons I love this pasta so much is that its sauce is so easy to make. It requires no cooking and is also very very nutritious.
The basic ingredients to prepare it are: raw beets, cucumbers, garlic, lemon, dill, yogurt and olive oil. It reminds a bit of tzatziki, it's true, but it's really the easiest and most summery thing there is in a sauce.

Tips and Substitutions
If you are vegan, you can replace the yogurt with soy yogurt.

Barbie's Pasta
Ingredients
- 600 gr. pasta of your choice
for the sauce
- 1 raw beet shredded
- 2 cucumbers
- 1-2 garlic cloves
- 1/2 lemon
- 2-3 tsp dill
- 2 cup yogurt
- salt
- 2 tbsp olive oil
Instructions
- Start by boiling your pasta according to the instructions on the package.
- Meanwhile, grate the beetroot. Grate the cucumbers and drain well. Pour the two ingredients into a bowl. Add the yogurt, garlic, salt, olive oil, lemon juice and dill. Mix well.
- If you want, you can beat all the ingredients in the blender like I do.
- Mix your pasta with the sauce and enjoy.
- You can keep the leftover sauce in the freezer to make the same pasta again another day.
