I enriched it with quite a few vegetables and made it simply delicious and incredibly nutritious. This easy cabbage with rice and colorful peppers is perfect for this season.

And it is certainly a very economical option since cabbage is one of the most economical vegetables. I personally had it from the village and decided to cook half of it this way.

The vegetables I used in my recipe are: cabbage, carrot, onion, tomato, red peppers and green peppers. I also used celery (which I also had from the village).

I also added a mixture of spices (black pepper, paprika, chili, oregano, thyme), turmeric and salt.

Finally I added wild rice. You can use whatever rice you want.

A wonderful, hearty meal perfect for this time of year.

Ingredients

  • 1/2 cabbage
  • 1 carrot
  • 2 onions
  • 1 green pepper
  • 1 red pepper
  • 1 tomato
  • 1 tbsp ketchup
  • 1 celery
  • 1 vegetable cube
  • salt
  • spice mix
  • turmeric
  • 2 tbsp olive oil
  • 1 cup wild rice

Instructions 

  • Start by heating the olive oil in a saucepan. Add all the vegetables except the cabbage. Sauté for 6-7 minutes. Add the cabbage and 4 fl. hot water. Add salt and spices and 1 cube of vegetables. Pour in the tomato paste.
  • Mix and let the ingredients cook for 10 minutes on medium heat. Add the rice and cook for another 15-20 minutes. If necessary add a little more water.
  • Your meal is ready.
  • Cover with a dry towel for 10 minutes to absorb excess liquid, uncover and enjoy.
