You can make walnut butter with raw, crushed or roasted walnuts. Here's how to do it all three ways.
Raw walnuts
In this case all you have to do is throw the walnuts into a good blender and beat them until they become a paste. This will take around 7-8 minutes. Add some salt if you like. Throw in 2 tbsp. olive oil and beat again. This recipe is for 2 cups of walnuts.
If you wish, you can add a little cinnamon or a little honey.

Soaked walnuts
This way you will get a butter with a slightly more textured texture. Soak the walnuts in the evening, drain them the next day.
Then spread them on a piece of non-stick paper in a baking tray and bake them at 180 degrees for 15 minutes. Let them cool before blending them.
Roasted walnuts
For an even more perfect, smooth result this is the best way to make nut butter. Spread the walnuts on a non-stick paper in a baking tray and bake at 180 degrees for 8-10 minutes. Let them cool and then put them in a blender. They will almost immediately begin to release their oils and turn into perfect nut butter.
