A wonderful red sauce with 5 hidden vegetables that will make winter pasta delicious.
I have made a similar recipe for red sauce but then I used more summer vegetables (zucchini and peas). This time I made it more wintery and used cauliflower in addition to tomato, onion, pepper and garlic.
A great way for adults and children to eat vegetables without even realizing it. The truth is that both Alex and Max know that the sauce with which they eat their pasta contains vegetables and it does not bother them at all. Max in particular eats in this way vegetables that under other circumstances, if he saw them in front of him, he would never touch them. And that for me is very important.
On the other hand, even we who love vegetables sometimes get tired of eating them every day. This sauce brings them back to our table without us realizing it. And that's another reason why I love it and make it quite often. And it's also perfect for an office taper.

Red Sauce with 5 Oven Baked Veggies
- 2 small tomatoes
- 1 onion cut in the middle
- 4-5 garlic cloves
- 1 red pepper
- 2-3 cup cauliflower
- 1 tbsp olive oil
- spice mix
- All you have to do is spread all the ingredients on non-stick paper in a pan. Add olive oil, salt and spices and bake at 180 C for 40 minutes.
- Once the 40 minutes have passed, take the vegetables out of the oven and put them in the blender. Beat well until smooth.
- Serve your sauce with pasta of your choice. Personally, this time I made wholemeal penne which I boiled according to the instructions on the package.
