The easiest leek curry you'll ever make. It's ready in just 20 minutes.
At this time of year, leeks are at their peak. So, since I had a few from the village, I thought I'd take advantage of them and make an easy curry.
You can make curry with many vegetables. If you haven't tried it with leeks yet, you should. The three ingredients you'll need to easily make a delicious, warm, comfort leek curry are leeks, coconut milk and curry powder.
Of course you will also need salt and black pepper but these do not count as "ingredients" since they are considered necessary in almost every recipe.
Try it with vegan feta cheese. It's amazing.
If you like this recipe you can try some of the following:
- 3-4 leeks
- 300 gr. coconut milk
- 1 tbsp curry powder
- salt and black pepper
- Start by boiling the leeks in salted water for 15 minutes. Drain them.
- Pour the coconut milk into a non-stick pan or wok. Add the curry and leeks. Add salt and black pepper. Taste and if you like add some smoked paprika.
- Stir for 2-3 minutes and set aside. Serve with steamed rice.
- If you want, add some vegetable feta. It fits perfectly.
