A layer of potatoes, a layer of mushrooms, a layer of grated vegan cheese and a few slices of tomato and the most comforting, delicious, easy meal is ready. Without many calories (you can't get lighter) but with a huge taste.

This black garlic from Black Garlic gives it a more unique taste.

Tips and Substitutions

If you are not vegan you can replace the vegan grated cheese with cheese of your choice.

You can skip the red pepper.

You can add other vegetables to the mushroom mixture if you like.

Ingredients

  • 3 potatoes
  • 1 onion
  • 3 black garlic cloves
  • 500 gr. mushrooms 
  • 1 red pepper
  • 300 gr. tomato sauce 
  • water 
  • salt
  • paprika
  • black pepper 
  • 3/4 cup vegan shredded cheese 
  • 4-6 tomato 
  • 2-3 tbsp olive oil

Instructions 

  • Start by mixing the potatoes after cutting them into slices with salt, spices and olive oil. Spread on a tray and bake at 180C for 20 minutes.
  • In the meantime, pour some olive oil into a non-stick pan. Once heated, add the onion, garlic and red pepper. After 3-4 minutes add the mushrooms. Mix and pour the tomato sauce and a little water.
  • Add spices and salt and cook for 6-7 minutes or until most of the liquid is absorbed. Set aside.
  • Spread the mushroom mixture over the potatoes. Pour the grated cheese and tomato slices on top. Bake for about 15 minutes. Let the food cool for 5 minutes, then cut into pieces and serve.
