I will never say no to mushrooms. I love them and can eat them no matter how they are cooked. This time I made mushrooms stroganoff in the lightest way.

Beef, chicken and meat in general are usually made in stroganoff. But if you are not a fan of meat or want a lighter version of stroganoff then you can make it with mushrooms.

This particular sauce can perfectly accompany your pasta and your grilled vegetables. It does not contain oil and butter and is ideal for vegans and vegetarians.
Usually, the thicker version of stroganoff also contains sour cream. My version only contains soy yogurt, so it's only 92 calories per serving.
If you are not vegan, you can replace the soy yogurt with classic yogurt of your choice, light or not.

Mushroom Stroganoff
Ingredients
- 250 gr. mushrooms
- 1 onion
- 1/2 cup soy yogurt
- lemon juice
- basil
- oregano
- salt
- pepper
- 1 garlic clove
- 1 vegetable cube
Instructions
- Pour a little water into a pan. Once hot, add the onion and garlic.
- After 1-2 minutes add the mushrooms and the vegetable cube. Cook for about 10 minutes.
- Add some lemon, oregano, basil, salt and pepper.
- Set aside, leave for about 5 minutes, then pour in the soy yogurt. Mix and you have ready the creamiest sauce for your pasta.
