I can eat 10 in a minute because I love them. Especially when I make them with my favorite vegetables. These vegan vegetable spring rolls are the perfect movie snack and in addition to being healthy, they are also very filling. 

In my recipe I used cabbage, carrot and red pepper for the filling. You can add onion, mushrooms and anything else you want. The combinations that can be made are endless.

Vegetable Spring Rolls

Ingredients

  • 100 gr. red pepper
  • 300 gr. shredded cabbage
  • 150 gr. carrot
  • 1 tbsp ketchup
  • 1 tbsp olive oil
  • salt
  • thyme
  • oregano
  • garlic
  • paprika
  • pesto
  • 10 φύλλα κρούστας

Instructions 

  • Start by heating 1 tbsp. olive oil in a non-stick pan. Add the cabbage, carrot, red pepper. Stir. Cook for 3-4 minutes.
  • Add 1 tbsp. ketchup. Add salt and spices of your choice (thyme, black pepper, garlic powder, paprika, chili, etc.).
  • Continue cooking until there is no more liquid in the pan.
  • For each spring roll you will need 1 phyllo. Put 2 tbsp. of the filling in the middle of each sheet and roll up.
  • Brush them with olive oil and bake them in a preheated oven at 200C for 15-20 minutes. Serve with dip or sauce of your choice.
  • I personally love them with pesto.
