A great, quick, healthy Mediterranean salad with wild rice and vegetables is perfect for a quick office meal.
Bored of cooking for the office? These days also exist and for many they are not few. So, here I have another idea for an office meal which is prepared literally in 12-15 minutes.

What will you need? Wild rice (like this) which is parboiled and needs 10 minutes to get ready, cucumber, olives, onion. You can also add red pepper, carrots, cherry tomatoes.
Of course you can use instead of wild rice brown rice or quinoa.

I personally accompanied my Mediterranean salad with a small pita bread which I baked in the toaster with a little olive oil and cut into 4.

Mediterranean Salad with Wild Rice
Ingredients
- 1 cup parboiled wild rice
- 1 cup cucumber
- 1/2 cup onion
- 1/2 cup olives
- 2 tbsp lemon
- 2 tbsp parsley or dill
- salt
- black pepper
- oregano
- 1-2 tbsp olive oil
Instructions
- Start by boiling your rice in salted water. While this is boiling chop all your vegetables.
- Drain the rice and mix it with all the vegetables, olive oil, lemon juice, salt, pepper and oregano. Serve with pita bread like I did or with some vegan (or non-vegan) feta.
