This super easy lettuce pesto is super easy, healthy and a #lessfoodwaste recipe.
It will take you just a few minutes to prepare and it will be the perfect sauce for your pasta.

The truth is that when I have some spinach, some lettuce, some kale in the fridge and I don't know what to do with it, I make this pesto so I don't throw it away. You can do the same and give utility to vegetables that would otherwise simply be thrown away.

Tips and Substitutions
If you don't have pine nuts at home, you can replace them with nuts of your choice.
Instead of nutritional yeast if you are not vegan you can use grated yellow cheese of your choice.
You can use the lettuce pesto in pasta, in sandwiches, on pizza or even as a side dish for your grilled vegetables.

Lettuce Pesto
Ingredients
- 3 cup lettuce or green mix
- 1/3 cup pine nuts or nuts of your choice
- 2-3 tbsp olive oil
- 3 garlic cloves
- salt
- black pepper
- 30 gr. nutritional yeast (or yellow cheese of choice)
Instructions
- Pour all the ingredients into the blender and pulse for 30 seconds. If you think it is necessary, add a little more olive oil or water.
