Green Pasta Salad
- 170 gr. penne
- 2 cucumbers
- 1/2 onion
- 3 cup cherry tomatoes
- 1 cup olives
- fresh dill
- 1 cup vegan feta cheese
for the dressing
- 1/4 cup water
- 1/3 cup olive oil
- 2 tbsp apple vinegar
- 1/2 lemon
- 2 tbsp maple syrup or honey
- 2 tsp mustard
- 3 garlic cloves
- black pepper
- fresh dill
- Boil your penne in salted water according to the instructions on the package. Pour cold water on your pasta and drain.
- Put all the ingredients for the salad and pasta in a bowl.
- In a small bowl, mix all the ingredients for the dressing. Pour over the salad and mix well.
