The classic leek rice becomes leek rice with colorful peppers and is wonderful in color and taste.
The truth is that the classic leek rice wanted its upgrade. Not that it is not tasty and as we have used to eat it but by adding tomatoes and colorful peppers it becomes even more nutritious, even more summery, even more delicious.
You can have it with vegan feta or vegan cream cheese.

Leeks with Rice and Colorful Peppers
A wonderful, summer food that apart from being light is also very very tasty.
- 500 gr. leeks
- 2 tbsp olive oil
- 2-3 spring onions
- 1 red pepper
- 1 orange pepper
- 2 garlic cloves
- 150 gr. brown rice
- 150 gr. tomatoes
- black pepper
- lemon juice
- Start by heating the olive oil in a saucepan. Add the leeks, salt and black pepper.
- Stir for 2-3 minutes and add the spring onions, garlic and rice. Stir for 2-3 minutes and add the tomatoes and hot water. Leave. boil all ingredients for 10 minutes.
- If the water is saved, add more. In 10 minutes, add the peppers. Leave for another 10 minutes and set aside.
- Serve with lemon.
