Make the most crispy baked eggplants in just 20 minutes!

All the ingredients I used in this recipe are from efresh.gr.

It does not have to be fried to be delicious. And the taste of these aubergines proves it.

Basically all you have to do to prepare them is to dip them in 3 different mixtures before baking them in the oven for 20-25 minutes.

Start by getting 3 bowls. In the first bowl, add a little corn flour. In the second bowl add almond milk and in the third bowl mix breadcrumbs or oat flour (if you want to avoid breadcrumbs) with spices (salt, black pepper, smoked paprika and oregano).

Put the eggplant slices first from the first bowl, then from the second and finally from the third. Transfer to non-stick paper in a pan and bake in a preheated oven for 20-25 minutes.

  • Dip each eggplant slice first in the corn flour, then in the almond milk and finally in the breadcrumbs mixture.
  • Transfer to non-stick paper in a baking tray and bake in a preheated oven at 200C for 20-25 minutes. In the middle of the year you turn your aubergines to get color on both sides.
  • Enjoy with a sauce of your choice.
