An amazing spring salad with lentils that you can enjoy whenever you want to eat something delicious and very very healthy.

The process is very simple. How long will you need to cook the lentils? Around 30 minutes.

How to make one of the easiest but delicious salads?

In addition to the lentils in my salad I put cabbage, cherry tomatoes, spring onion, vegan feta that goes perfectly with the lentils and nothing else. You can also add purple cabbage, grated broccoli and cauliflower and whatever else you want.

This particular salad can be kept in the fridge ready made for up to 4 days which means that you can make a large amount and enjoy it for over 1 day.

What if you do not want to put walnuts in your dressing?

You can simply replace the walnuts with another nut such as almonds, hazelnuts, cashews, etc.

A very easy salad that you will want to eat all spring and summer!

Ingredients

for the salad

  • 3/4 cup raw lentils 
  • 2 cup cabbage
  • 2 cup cherry tomatoes 
  • 2 spring onions
  • 120 gr. vegan feta cheese 

for the dressing

  • 1 handful of walnuts
  • 1/2 garlic clove 
  • 1/2 tbsp maple syrup 
  • 1 tbsp vinegar 
  • 2 tbsp olive oil 
  • salt
  • black pepper 
  • 1/2-1 tbsp water 

Instructions 

  • Start by boiling the lentils in lightly salted water. They want around 30 minutes. Drain them.
  • Meanwhile, chop the vegetables.
  • For the dressing, first hit the nuts in the blender. Then mix with the remaining ingredients. Add a little water to make the dressing a little thinner. Mix all the ingredients together and enjoy.
