This salad I have here for you here is very easy, it is prepared in a few minutes and requires minimal cooking. This is a dreamy mushroom salad!

I had eaten mushroom salad a long time ago in a restaurant in Kolonaki (I do not even remember the name of the restaurant) and I do not even remember the other ingredients of the salad except for the mushrooms. All I can remember is that I liked it very much and so I decided to make my own recipe for mushroom salad.

How is the mushroom salad made?

The basic ingredient that is the protein of the salad-meal is the mushrooms.

In addition to mushrooms in my own mushroom salad I put cabbage, carrot, cucumber, red pepper, spring onion and cashews.

As for the sauce… I decided to make a raw tomato sauce for more freshness since its spring.

So I used tomato, tahini, lemon juice, garlic, salt and pepper and beat them all together in the blender.

A salad-meal that you will love. And it is also very, very easy.

Ingredients

  • 4 cup cabbage
  • 1 cup red pepper
  • 1 cup carrot
  • 1/2 cup spring onions
  • 1 cup cucumber
  • 1/2 cup cashews
  • 2-3 cup mushrooms

for the dressing

  • 1 tomato
  • 1/3 cup tahini
  • 2 tbsp lemon juice
  • 2 garlic cloves
  • salt
  • black pepper

Instructions 

  • All you have to cook is the mushrooms. Pour a little olive oil in a non-stick pan or wok. Once warm, add the mushrooms and cook for 7-8 minutes. Add salt and pepper.
  • Put aside.
  • Put all the ingredients for the salad in a bowl.
  • Beat all the dressing ingredients in the blender. You do not have to cook anything. Drizzle your salad with the dressing.
