Vegan ice cream cheesecake sandwich without sugar that will make you happy.
Now that the weather is warmer, this ice cream sandwich that is both nutritious and healthy, will cool you down.

The recipe is very simple and has minimal ingredients. The addition of fruit is not mandatory. Personally I really like berries, blueberries, strawberries and so I added some. You can not add any fruit if you do not want to.
You can also add a scoop of protein Power Mix Vanilla from Amino Animo to make it even healthier.

Tips and Substitutions
If you do not want to make this vegan version of cheesecake you can replace vegan cream cheese with regular cream cheese and coconut yogurt with classic yogurt.
Instead of maple syrup you can use honey or some sugar substitute such as monk fruit sugar, erythritol, xylitol, stevia 1: 1, coconut sugar or whatever you want.

Vegan Cheesecake Ice Cream Sandwich
Ingredients
- 14 sugar free biscuits
- 1/4 cup frozen berries
- 110 gr. vegan cream cheese
- 180 gr. vegan coconut yogurt
- 3 tbsp maple syrup or sugar substitute of choice
Instructions
- In a bowl, mix the cream cheese with the yogurt. Once combined add the maple syrup and then the berries. Mix well.
- Take a digestive cookie and put on 2-3 tsp from the cheesecake mixture. Cover with another cookie. Do the same until you have are done with the cheesecake mixture.
- Put in the freezer for at least 4 hours before enjoying. When you want to eat an ice cream sandwich, take it out of the freezer and leave it outside for 5-10 minutes before eating it.
