They call it moutabal and it is the authentic, Lebanese version of baba ganoush!

Personally, in addition to the fact that I really like to eat it with a spoon, I also really like to spread it on bread and enjoy it for a healthy, easy, quick dinner.

The basic ingredients for making moutabal are eggplant, tahini, lemon, garlic, salt and olive oil. If you have these very simple ingredients in your kitchen right now you can make the perfect Lebanese eggplant salad.

Instructions 

  • Start by baking the aubergines at 200 degrees for 30 minutes after cutting them in half and adding a little olive oil and a little salt.
  • With a spoon, remove the crumb from the aubergines and throw it in a bowl.
  • Add the tahini, lemon juice, olive oil, salt and garlic. Stir.
  • Serve with a little olive oil and a little smoked paprika.
