These divine and easy baked red lentil meatballs are ready in minutes and require very little preparation.

Forget the classic brown lentils that take an hour to boil. The red lentils do not even want to be boiled for this particular recipe, only soaked. Leave them covered in plenty of water for 2 hours and then they are ready to use. 

The basic ingredients you will need to make this recipe are: 

red lentils 

onion and garlic 

parsley and oregano 

tomato paste 

salt and black pepper 

The simplest ingredients that will give you in a few minutes the ultimate super nutritious food. 

How to eat red lentil meatballs

You can enjoy them with salad, with potatoes, put them in tomato sauce and make them red with pasta of your choice. 

You can also put them in sandwiches or tortillas or bake them as burgers and enjoy them in a burger. 

Personally, I really like to eat them with salad and accompany them with a tahini sauce (I have your recipe below). 

For the tahini sauce, mix in a bowl 1/4 cup. tahini, 1 tbsp. chopped dill, 1/2 tbsp. lemon, a little garlic powder, 1/2 tbsp. olive oil, salt, black pepper, 1/4 cup. water (add it slowly to get the texture you want).

Can we put them in the fridge or freezer? 

Put them in a airtight container and store them in the refrigerator for up to 3 days. Alternatively you can store the mixture in the refrigerator without cooking the meatballs for up to 5 days. 

Of course you can also put it in the freezer. Remove from the freezer overnight before use.

Instructions 

  • Start by soaking the lentils in water for about 2 hours. Drain and toss the lentils in the blender along with all the other ingredients. 
  • Χτυπήστε καλά. Φτιάξτε 12 κεφτέδες και βάλτε τους σε αντικολλητικό χαρτί μέσα σε ταψί. Ψήστε για 20 λεπτά στους 200 βαθμούς αφού προθερμάνετε τον φούρνο. 
  • In the middle of the time, turn your meatballs. 
  • Serve them with tahini sauce.
