There are so many recipes for the perfect baked potatoes and the truth is that I have already tried several of them with some variations and additions of my own. These crispy baked potatoes, however, are as if they came from another planet!

And if you try them you will not want to eat them otherwise. The reason they become so crunchy even though they are baked in the oven is a "frozen" trick that simply transforms them.
What do I mean? Once you cut them, put them in a bowl with cold water and ice cubes and leave them there for 25-30 minutes. Then take them out of the ice and wipe them well with a towel so that they have no water on them. You will see the rest below in the recipe…

But why would we put them on ice?
In this way, a part of the potato starch is removed, as a result of which they do not stick together during baking and eventually become much crispier.

Crispy Oven Baked Potato Wedges
Ingredients
- 4 potatoes
- 1/2 tbsp garlic
- 1/2 tbsp onion
- 1 tsp paprika
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp corn flour
- 2 tbsp olive oil
- parsley
for the bbq sauce
- 1 cup water
- 1 cup ketchup
- 1/2 tbsp garlic
- 1/2 tbsp onion
- 1/4 cup apple vinegar
- 1-3 tsp sriracha sauce
- 1 tsp black pepper
Instructions
- Start by cutting your potatoes in half, then again in the middle and then again in the middle creating crispy potatoes.
- Put them in a bowl with cold water and ice cubes and leave them there for 30 minutes.
- Take them out and wipe them well with a towel.
- Put them back in a bowl and mix them with the olive oil, corn flour and spices. Bake in a preheated oven at 180C for 30 minutes. Turn them halfway.
