Vegan burritos with chickpeas, vegetables and hot sauce.

A hearty burrito that is full of vegetables and legumes and very full of flavor. This one is made with chickpeas. If you prefer lentils or beans, you can simply replace them by following exactly the same recipe but with a different legume.

  • 2 large tortillas
  • 110 gr. chickpeas
  • 1/2 onion
  • cumin
  • chili sauce
  • salt
  • 1/2 red pepper
  • 1/2 carrot
  • lemon juice
  • 1 hand full of cherry tomatoes
  • salt
  • black pepper

for the sauce

  • 40 gr. vegan yogurt
  • cumin
  • 1/2 tbsp sriracha sauce
  • 1/2 tbsp maple syrup or agave
  • lemon juice
  • water


  • Start by preparing the chickpea mixture. In a pan or wok sprinkle with a little olive oil. Add the chickpeas, onion, cumin, chili and salt. Cook for 5 minutes. Set aside.
  • In a bowl, mix the carrot, pepper, cherry tomatoes, lemon, salt and black pepper.
  • For the sauce just mix in a bowl all the ingredients for the sauce.
  • Spread a tortilla in front of you. Spread a little sauce in the middle, put half the chickpeas and half the salad on top and a little more sauce and wrap. Do the same with the second burrito.
