A lemon detox soup with orzo and chickpeas. It's dreamy!
For these winter soups I live, the soups that have it all… taste, flavor, nutrients! This soup is one of my favorites because I love orzo and I can eat it day and night.
This soup is a detox soup, you can enjoy it after some fuss and still not feel like you are eating something light. It will fill you up, it will nourish you.
How to make the perfect vegan avgolemono
The basic ingredients for vegan avgolemono are tahini and lemon juice. With these two ingredients you can make the perfect avgolemono and make your soup even richer.
All you have to do is simply pour the tahini and lemon juice into it after your soup is ready. Mix and taste. Add more lemon juice if you think your soup needs it.
The basic ingredients you will need to make the perfect lemon detox soup:
water or vegetable broth
onion, carrot, garlic

Lemon detox soup with orzo and chickpeas
- 1 tbsp olive oil
- 1/2 onion
- 1,5 carrot
- 2 garlic cloves
- 5-6 cup vegetable broth
- 1/2 cup orzo
- 1 1/2 cup chickpeas
- 40 gr. tahini
- 1/8-1/4 cup lemon juice
- fresh dill
- black pepper
- Start by sautéing the onion and carrot in olive oil. If you do not want to sauté in olive oil just use water. Add a little salt.
- After 5-7 minutes add the garlic and sauté for another 1 minute.
- Add the vegetable broth, orzo and chickpeas. Add salt and pepper. Once they have boiled, lower and cook over medium heat for 15 minutes.
- Remove from the heat, add the tahini and lemon and mix. Try and see if you need another lemon. Serve with dill.
