The most delicious, warm, winter vegan carrot soup with ginger that you will love. It is ideal for a light dinner.

A creamy carrot soup will warm you up and fill you up this fall. Made with carrots, ginger, coconut milk, thyme, lime.

I do not know if you understand how much I love soups. This winter we will make many soups with nutrients that will fill us with energy.

This particular soup is ideal for "meal preparation" (meal prep) as it is delicious on the second and third day after cooking.

Can you not put coconut milk in your soup?

It is very tasty, for me, and without coconut milk. Of course with coconut milk it is divine. This does not mean, however, that you can not skip it.

You could also add half the amount of coconut milk.

How do we store it?

This carrot soup can be kept in the refrigerator for up to 4 days.

However, it also goes in the freezer where it can be stored for up to 3 months. All you have to do is divide your soup into portions and put it in jars. Then put in the freezer.



If you want to add a crunch to your soup, you can add some croutons to your soup. !.

A soup that will warm your soul


  • 1 tbsp olive oil
  • 1 onion
  • 2 garlic cloves
  • 1 tbsp ginger
  • 5 cup carrots
  • 6 cup vegetable broth
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp thyme
  • 400 ml. coconut milk
  • 1/2 lime
  • chili flakes (if you want)


  • Start by sautéing the onion in 1 tbsp olive oil for 5-6 minutes. Add the garlic and ginger and sauté for another 1-2 minutes.
  • Add the carrots, vegetable broth, salt, pepper and thyme. Cook for 20-30 minutes until the carrots are soft.
  • Put in the blender and beat until you get a velvety soup. Transfer back to the pot. Add the coconut milk and lime juice. Stir and serve.

    Καλησπέρα, όταν λέτε 6 φλυτζάνια ζωμό λαχανικών τι εννοείται? Διαλύουμε 1 κύβο σε νερό κ χρησιμοποιούμε 6 φλυτζάνια?
