This fresh strawberry bread is delicious and very easy to make. And since strawberries are now at their best (it's their season) this particular recipe is perfect for you to try now.
The truth is that if I have strawberries at home they will hardly stay in the fridge for more than a day. My son loves them and eats them like crazy.


In my strawberry bread that I usually make I add a little icing on top, especially when I want to serve it to friends. Otherwise, if I just make it for the family, I leave it without icing.
If you want you can make this strawberry jam without sugar.


How to store strawberry bread
It is very important to let your bread cool completely before storing it. Wrap it in foil and then put it in an airtight container or food bag. You can store your bread in the refrigerator for up to a week or in the freezer for up to 2-3 months.
Instead of strawberry bread you can use the exact same recipe to make strawberry muffins.

If you are not vegans then you can make the following changes to the recipe:
Instead of flaxseed or chia seeds soaked in water you can use an egg.
Instead of coconut oil put the same amount of butter.
Instead of almond milk, use milk of your choice.

Strawberry Bread
Ingredients
- 50 gr. coconut oil (1/4 cup)
- 150 gr. sugar substitute of your choice
- 1 tbsp flaxseeds or chia seeds soaked in 3 tbsp water for 4-5 minutes
- 260 gr. flour (2 cups)
- 2 tsp baking powder
- 1/2 tsp salt
- 120 gr. almond milk (1/2 cup)
- 1/2 tsp vanilla extract
- 200 gr. strawberries (1 1/2 cup)
for the glaze
- 60 gr. icing substitutes
- 1/2 tsp vanilla extract
- 1 tbsp almond milk
Instructions
- Start by preheating the oven to 180C. Grease a 24 cm form with olive oil.
- In a bowl, mix the coconut oil with the sugar substitute. Once mixed, add the flaxseed mixture. Stir again.
- In another bowl, mix the flour, baking powder and salt.
- Using a wooden spoon, transfer the flour to the egg mixture little by little. Add a little of this and a little almond milk until all the ingredients are well mixed. Add the vanilla and mix again.
- Chop the strawberries and add them to the dough. Stir gently.
- Pour the mixture into the mold and bake for 60-65 minutes. If it seems that it is going to grab from above, cover it with a foil and continue baking.
- ** If you want you can put on top 3 tbsp brown sugar substitute mixed with 1/2 tsp cinnamon.
- For the glaze, simply mix the icing substitute with the vanilla and milk. If you see that he wants more milk, add a little more. Once the bread is completely cool, pour the icing on top. The icing is optional.

Μπορώ να βάλω μέλι αντί για υποκατάστατα ζάχαρης?
Το μέλι έχει εντελώς άλλη σύσταση από τη ζάχαρη. Θα πρέπει να αλλάξει όλη η συνταγή και οι αναλογίες για να μπει μέλι.
Έφτιαξα τα brownies σου με το τριμμένο αμύγδαλο. και ήταν εκπληκτικά. Μου θύμισαν σοκολάτα υγείας!
